This is an interesting looking Heraldry Graphic from an 1809 book! This one shows the head piece of a suit of Armour, that's topped with a Crown and a Lion and embellished with ornate Scrolls. Fun!
What you are referring to as scrolls is mantling. It is what a knight wore over his helmet to help keep the sun's rays off the metal. This mantling is gold, lined with ermine, which is associated with nobility. There's also an ermine torse, which was a twisted ring of material that held the mantling to the helmet.
